This stir-fry features crispy tempeh sautéed with colorful bell peppers, broccoli, and snap peas, all coated in a sweet and tangy chili sauce. The dish takes about 30 minutes to prepare and serves 4 people.

Ingredients

  • 1 block (8 oz) tempeh, cubed
  • 2 tablespoons vegetable oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup broccoli florets
  • 1 cup snap peas
  • 3 cloves garlic, minced
  • 1/4 cup sweet chili sauce
  • 2 tablespoons soy sauce or tamari
  • 1 tablespoon lime juice
  • Cooked rice or quinoa for serving
  • Chopped green onions and sesame seeds for garnish

Instructions

  1. Prepare the Tempeh: In a skillet, heat 1 tablespoon of vegetable oil over medium heat. Add the cubed tempeh and cook until golden brown and crispy on all sides, about 5-7 minutes. Remove from the skillet and set aside.
  2. Sauté the Vegetables: In the same skillet, add the remaining tablespoon of oil. Add the sliced bell peppers, broccoli, and snap peas. Sauté for 4-5 minutes until the vegetables are tender-crisp.
  3. Add Garlic: Stir in the minced garlic and cook for an additional 1 minute until fragrant.
  4. Combine Ingredients: Return the cooked tempeh to the skillet. Pour in the sweet chili sauce, soy sauce, and lime juice. Stir well to coat everything evenly and cook for another 2-3 minutes until heated through.
  5. Serve: Remove from heat and serve the stir-fry over cooked rice or quinoa. Garnish with chopped green onions and sesame seeds.
