This wrap features crispy cabbage slaw, marinated tofu, and a variety of fresh vegetables, all wrapped in a tortilla. It takes about 30 minutes to prepare and serves 4 people.

Ingredients

  • 1 block of firm tofu, drained and pressed
  • 2 cups green cabbage, shredded
  • 1 cup carrots, grated
  • 1 bell pepper, thinly sliced
  • 1/4 cup green onions, chopped
  • 2 tablespoons soy sauce or tamari
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 teaspoon maple syrup
  • 4 large tortillas or wraps
  • Salt and pepper to taste
  • Sesame seeds for garnish (optional)

Instructions

  1. Prepare the Tofu: Cut the pressed tofu into thin strips. In a bowl, mix soy sauce, sesame oil, rice vinegar, and maple syrup. Marinate the tofu strips in this mixture for at least 10 minutes.
  2. Cook the Tofu: Heat a non-stick skillet over medium heat. Add the marinated tofu and cook for about 5-7 minutes, turning occasionally until golden brown and slightly crispy.
  3. Make the Slaw: In a large bowl, combine shredded cabbage, grated carrots, sliced bell pepper, and chopped green onions. Toss with a pinch of salt and pepper.
  4. Assemble the Wraps: Lay a tortilla flat and add a generous amount of cabbage slaw and cooked tofu in the center. Fold in the sides and roll tightly to enclose the filling.
  5. Serve: Slice the wraps in half and sprinkle with sesame seeds if desired. Serve immediately or wrap in foil for a portable meal.
