Tropical Vegan Coconut Lime Loaf With a Soft Crumb

This Vegan Coconut Lime Loaf features a moist and fluffy crumb infused with coconut milk and lime juice. The combination of sweet coconut and tangy lime creates a tropical flavor profile that is both refreshing and satisfying. Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup coconut sugar or brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup coconut milk
  • 1/4 cup lime juice (freshly squeezed)
  • 1/4 cup vegetable oil or melted coconut oil
  • 1 teaspoon vanilla extract
  • 1/2 cup desiccated coconut (unsweetened)
  • Zest of 1 lime

Instructions

  1. Prep the Oven: Preheat your oven to 350°F (175°C) and grease a loaf pan or line it with parchment paper.
