Ingredients

  • ½ cup coconut oil or vegan butter, softened
  • 2 tablespoons powdered sugar
  • 1/4 teaspoon salt
  • 2 tablespoons cold water
  • 1 cup sugar
  • 1/4 cup cornstarch
  • 1 ½ cups water
  • 1 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1/4 teaspoon turmeric (for color, optional)
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon cream of tartar
  • 1/2 cup aquafaba (chickpea brine)
  • Extra sugar for topping if desired

Instructions

  1. Make the Crust: In a mixing bowl, combine the flour, coconut oil, powdered sugar, and salt. Mix until crumbly, then add cold water until a dough forms. Press the dough into a pie dish and refrigerate for 30 minutes.
