Ingredients

  • 1 cup aquafaba (the liquid from canned chickpeas)
  • 1 cup granulated sugar
  • 1 tablespoon vanilla extract
  • 1/2 teaspoon cream of tartar
  • 1/4 cup cornstarch
  • 1/4 cup powdered sugar (for dusting)
  • 1/2 cup vegan-friendly gelatin or agar-agar (optional, for firmness)

Instructions

  1. Prepare the Pan: Line an 8×8 inch baking dish with parchment paper, letting the paper hang over the edges for easy removal later.
  2. Whip Aquafaba: In a large mixing bowl, use an electric mixer to whip the aquafaba on high speed until soft peaks form. Gradually add the granulated sugar and cream of tartar, continuing to whip until glossy and stiff peaks form (about 10 minutes).
  3. Add Flavor: Mix in the vanilla extract gently until well combined.
  4. Combine and Set: If using, dissolve the vegan gelatine or agar-agar according to package instructions and fold it into the aquafaba mixture. Spoon the mixture into the prepared dish, smoothing the top with a spatula.
  5. Allow to Set: Let the mixture sit at room temperature for about 4 hours or until completely set. For faster results, refrigerate for 1-2 hours.
  6. Cut into Squares: Once set, lift the marshmallow out of the pan using the parchment overhang and place it on a cutting board. Lightly dust with cornstarch and powdered sugar before cutting into squares.
  7. Serve: Enjoy the squares as they are or use them as a topping for other desserts!
