This vegan blueberry pie combines fresh blueberries with a hint of lemon juice and a touch of sugar, all nestled in a homemade pie crust. The pie takes about an hour to prepare and bake, serving approximately 8 slices.

Ingredients

  • 2 cups fresh blueberries
  • 1 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 prepared vegan pie crust
  • 1 tablespoon non-dairy milk for brushing crust
  • 1 tablespoon additional sugar for sprinkling on top

Instructions

  1. Preheat the Oven: Preheat your oven to 375°F (190°C).
