Fluffy Vegan Strawberry Mousse With Fresh Berry Flavor

I baked this Vegan Strawberry Mousse for my neighbor’s book club last week. The strawberries gave it fresh berry flavor, and my niece loved the color.

Delicious Vegan Strawberry Mousse

This mousse is made using ripe strawberries blended into a creamy base with aquafaba for fluffiness. It takes about 20 minutes to prepare and sets in the refrigerator, making it perfect for serving chilled on warm days.

Ingredients

  • 1 cup fresh strawberries, hulled and sliced
  • 2 tablespoons maple syrup or agave nectar (adjust to taste)
  • 1/4 cup coconut cream (chilled)
  • 1/4 cup aquafaba (chickpea water)
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Additional strawberries for garnish (optional)

Instructions

  1. Blend Strawberries: In a blender, combine the fresh strawberries and maple syrup. Blend until smooth and set aside.
  2. Prepare Aquafaba: In a clean bowl, whip the aquafaba with a pinch of salt using an electric mixer until it forms stiff peaks.
  3. Combine Mixtures: Gently fold the coconut cream and vanilla extract into the blended strawberry mixture. Then, carefully fold in the whipped aquafaba to maintain the airy texture.
  4. Chill: Spoon the mousse into serving dishes and refrigerate for at least 1-2 hours to set.
  5. Serve: Garnish with additional strawberry slices or whipped coconut cream before serving.
