Fluffy Homemade Vegan Marshmallows That Melt in Your Mouth

I made this Vegan Marshmallows for my aunt’s garden party last month. The marshmallows came out fluffy and light, and my nephew loved them.

Irresistibly Fluffy Vegan Marshmallows

This vegan marshmallow recipe yields a soft and fluffy texture using aquafaba as a base. The preparation process takes about 2 hours, including cooling, and it makes approximately 20 marshmallows.

Ingredients

  • 1 cup aquafaba (liquid from canned chickpeas)
  • 1/2 teaspoon cream of tartar
  • 1 cup granulated sugar
  • 1/2 cup light corn syrup
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 tablespoon powdered sugar for dusting
  • 1 tablespoon cornstarch for dusting

Instructions

  1. Prepare the Pan: Grease a 9×9 inch square pan and dust it with a mixture of powdered sugar and cornstarch to prevent the marshmallows from sticking.
  2. Whip the Aquafaba: In a mixing bowl, combine the aquafaba and cream of tartar. Use a hand mixer or stand mixer to whip until soft peaks form (about 10-15 minutes).
  3. Cook the Sugar Mixture: In a saucepan, combine the granulated sugar, corn syrup, salt, and 1/4 cup of water. Heat over medium heat until it reaches 240°F (115°C). Remove from heat once it reaches that temperature.
  4. Combine: Gradually pour the hot sugar mixture into the whipped aquafaba while continuing to whip. Add the vanilla extract and increase the mixer speed to high, beating until the mixture is thick and fluffy (about 5-7 minutes).
  5. Transfer to Pan: Pour the marshmallow mixture into the prepared pan, smoothing the top with a spatula. Dust the top with more powdered sugar and cornstarch.
  6. Cool: Let the marshmallows cool at room temperature for at least 2 hours or until set. Once set, cut into squares and dust the edges with the powdered sugar-cornstarch mixture.
