Flaky Vegan Blueberry Turnovers With a Jammy Berry Center

Delicious Vegan Blueberry Turnovers

Flaky vegan blueberry turnovers are golden brown with powdered sugar on a rustic table.

Filled with a sweet blueberry filling, these vegan turnovers are baked until golden and flaky. This recipe takes about 45 minutes and yields 8 turnovers, making it suitable for sharing with friends or family.

Ingredients

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 tablespoon sugar
  • 1/2 cup coconut oil or vegan butter, chilled and solid
  • 5-7 tablespoons ice water
  • 2 cups fresh or frozen blueberries
  • 1/4 cup sugar (adjust to taste)
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • Almond milk for brushing
  • Powdered sugar for serving (optional)

Instructions

  1. Make the Dough: In a bowl, whisk together flour, salt, and sugar. Add in chilled coconut oil or vegan butter and mix until crumbly. Gradually add ice water until the dough forms. Wrap in plastic and chill for at least 30 minutes.
  2. Prepare the Filling: In a saucepan, combine blueberries, sugar, lemon juice, cornstarch, and vanilla extract. Cook over medium heat until the mixture is bubbly and the blueberries start to break down (about 5-7 minutes). Remove from heat and let cool.
  3. Roll Out the Dough: On a floured surface, roll out the chilled dough to about 1/4 inch thickness. Cut into squares (about 4×4 inches).
  4. Fill the Turnovers: Place a spoonful of blueberry filling in the center of each square. Fold the dough over to create a triangle and seal the edges by crimping with a fork.
  5. Bake: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper. Place the turnovers on the sheet, brush with almond milk, and bake for 20-25 minutes until golden brown.
  6. Serve: Allow to cool slightly before dusting with powdered sugar and serving. Enjoy warm or at room temperature.
