This vegan peanut brittle features roasted peanuts coated in a rich, caramelized sugar mixture. Made without any animal products, this brittle offers a satisfying crunch and sweet flavor, making it ideal for sharing or enjoying solo.
Ingredients
- 1 cup raw peanuts
- 1 cup granulated sugar
- 1/4 cup water
- 1/4 cup light corn syrup
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- Optional: pinch of sea salt for topping
Instructions
- Prepare the Pan: Line a baking sheet with parchment paper and set aside.
- Roast the Peanuts: In a dry skillet over medium heat, roast the peanuts until lightly golden and fragrant, about 5 minutes. Stir frequently to avoid burning.
- Make the Caramel: In a medium saucepan, combine granulated sugar, water, corn syrup, and salt. Cook over medium heat, stirring until the sugar dissolves. Bring to a boil and let it simmer without stirring until the mixture turns a deep amber color (about 5-7 minutes). Use a candy thermometer for accuracy, aiming for 300°F (hard crack stage).
- Add Peanuts: Once the caramel reaches the desired temperature, remove it from heat and quickly stir in the roasted peanuts, vanilla extract, and baking soda until well combined.
- Spread: Pour the mixture onto the prepared baking sheet and spread it out evenly with a spatula. If desired, sprinkle with a pinch of sea salt.
- Let it Cool: Allow the peanut brittle to cool completely at room temperature until hardened.
- Break into Pieces: Once cooled, break the brittle into pieces and enjoy!
