Crisp Vegan Vanilla Granola With a Sweet Bakery-Style Flavor

Easy and Delicious Vegan Vanilla Granola

This granola combines rolled oats, nuts, and seeds with a touch of maple syrup and vanilla extract, creating a crunchy texture and rich flavor. Ready in about 30 minutes, it makes a perfect addition to smoothies or dairy-free yogurt.

Ingredients

  • 3 cups rolled oats
  • 1 cup mixed nuts (e.g., almonds, walnuts, pecans), chopped
  • 1/2 cup pumpkin seeds or sunflower seeds
  • 1/4 cup maple syrup
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup dried fruit (e.g., raisins, cranberries) optional

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mix the Ingredients: In a large bowl, combine rolled oats, chopped nuts, seeds, salt, and cinnamon. In a separate bowl, whisk together maple syrup, melted coconut oil, and vanilla extract until well combined.
  3. Combine and Bake: Pour the wet mixture over the dry ingredients. Stir until everything is evenly coated. Spread the mixture onto the prepared baking sheet in an even layer. Bake for 20-25 minutes, stirring halfway through, until golden brown.
  4. Add Dried Fruit: If using, stir in the dried fruit as soon as you take the granola out of the oven. Let it cool completely on the baking sheet before transferring to an airtight container.
