These vegan frozen cheesecake bars combine a nut-rich crust with a smooth and creamy filling made from cashews and coconut cream. The bars are easy to make and are perfect for feeding a crowd on hot days, requiring about 30 minutes of prep time and chilling in the freezer.

Ingredients

  • 1 cup raw cashews, soaked for 4 hours and drained
  • 1/2 cup coconut cream (from a can of full-fat coconut milk)
  • 1/4 cup maple syrup
  • 1/4 cup lemon juice
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 cup almonds or graham cracker crumbs (for crust)
  • 1/4 cup melted coconut oil (for crust)
  • 2 tablespoons maple syrup (for crust)

Instructions

  1. Prepare the Cashews: Soak raw cashews in water for at least 4 hours or overnight. Drain and rinse before using.
  2. Make the Crust: In a food processor, combine the almonds or graham cracker crumbs, melted coconut oil, and maple syrup. Pulse until well combined and the mixture resembles wet sand.
  3. Press the Crust: Line a square baking dish with parchment paper. Press the crust mixture firmly into the bottom of the prepared dish to create an even layer.
  4. Blend the Filling: In a blender or food processor, combine the soaked cashews, coconut cream, maple syrup, lemon juice, vanilla extract, and salt. Blend until smooth and creamy.
  5. Pour the Filling: Pour the creamy filling over the crust, spreading it evenly with a spatula.
  6. Freeze the Bars: Place the dish in the freezer and freeze for at least 4 hours or until set. Once frozen, lift the bars from the dish using the parchment paper and cut into squares.
  7. Serve: Enjoy the bars straight from the freezer for a cool, delicious treat. Store any leftovers in the freezer.
