Delicious Vegan Almond Croissants

These bakery-style vegan almond croissants feature layers of flaky pastry, filled with a creamy almond paste that gives them a delicious nutty flavor. The recipe yields about 8 croissants and requires some chilling time for the dough.
Ingredients
- 2 cups all-purpose flour
- 1/4 cup powdered sugar
- 1/2 teaspoon salt
- 1/2 cup vegan butter, chilled and cubed
- 1/4 cup cold almond milk
- 1 teaspoon vanilla extract
- 1/2 cup almond meal
- 1/4 cup maple syrup
- 1 tablespoon maple syrup for glazing
- Sliced almonds for topping (optional)
Instructions
- Make the Dough: In a large bowl, mix flour, powdered sugar, and salt. Add chilled vegan butter and mix until the mixture resembles coarse crumbs.
- Combine: Add almond milk and vanilla extract to the flour mixture. Stir until the dough comes together. Shape into a disk, wrap in plastic, and refrigerate for 1 hour.
- Prepare the Filling: In a bowl, combine almond meal and maple syrup. Mix until smooth and creamy.
- Roll Out Dough: On a lightly floured surface, roll out the chilled dough into a large rectangle. Fold in thirds like a business letter, then roll out again. Repeat this process two more times for a flaky texture.
- Shape Croissants: Cut the dough into triangles. Place a spoonful of the almond filling at the wide end of each triangle. Roll them up from the wide end to the point, forming a croissant shape.
- Final Rise: Place the croissants on a baking sheet lined with parchment paper. Cover and let rise for about 30 minutes.
- Bake: Preheat the oven to 375°F (190°C). Brush the croissants with maple syrup and sprinkle sliced almonds on top. Bake for 20-25 minutes or until golden brown.
- Serve: Allow the croissants to cool slightly before serving. Enjoy them warm for the best experience.
