Bakery-Style Vegan Almond Croissants With a Rich Nutty Center

I baked this Vegan Almond Croissants for my neighbor’s book club last week. The almond center stayed rich and nutty, and my friend loved them.

These bakery-style vegan almond croissants feature layers of flaky pastry, filled with a creamy almond paste that gives them a delicious nutty flavor. The recipe yields about 8 croissants and requires some chilling time for the dough.

Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup powdered sugar
  • 1/2 teaspoon salt
  • 1/2 cup vegan butter, chilled and cubed
  • 1/4 cup cold almond milk
  • 1 teaspoon vanilla extract
  • 1/2 cup almond meal
  • 1/4 cup maple syrup
  • 1 tablespoon maple syrup for glazing
  • Sliced almonds for topping (optional)

Instructions

  1. Make the Dough: In a large bowl, mix flour, powdered sugar, and salt. Add chilled vegan butter and mix until the mixture resembles coarse crumbs.
  2. Combine: Add almond milk and vanilla extract to the flour mixture. Stir until the dough comes together. Shape into a disk, wrap in plastic, and refrigerate for 1 hour.
  3. Prepare the Filling: In a bowl, combine almond meal and maple syrup. Mix until smooth and creamy.
  4. Roll Out Dough: On a lightly floured surface, roll out the chilled dough into a large rectangle. Fold in thirds like a business letter, then roll out again. Repeat this process two more times for a flaky texture.
  5. Shape Croissants: Cut the dough into triangles. Place a spoonful of the almond filling at the wide end of each triangle. Roll them up from the wide end to the point, forming a croissant shape.
  6. Final Rise: Place the croissants on a baking sheet lined with parchment paper. Cover and let rise for about 30 minutes.
  7. Bake: Preheat the oven to 375°F (190°C). Brush the croissants with maple syrup and sprinkle sliced almonds on top. Bake for 20-25 minutes or until golden brown.
  8. Serve: Allow the croissants to cool slightly before serving. Enjoy them warm for the best experience.
