Easy Vegan Raspberry Turnovers

These turnovers are made with fresh or frozen raspberries, sugar, and a touch of lemon juice for brightness, wrapped in a buttery vegan puff pastry. The recipe takes about 30 minutes from start to finish and yields 8 turnovers.
Ingredients
- 2 cups fresh or frozen raspberries
- 1/2 cup granulated sugar (adjust to taste)
- 1 tablespoon lemon juice
- 1 tablespoon cornstarch
- 1 package vegan puff pastry (thawed)
- 1 plant-based milk for brushing (optional)
- Powdered sugar for dusting (optional)
Instructions
- Prepare the Filling: In a medium saucepan over medium heat, combine the raspberries, sugar, lemon juice, and cornstarch. Cook until the raspberries break down and the mixture thickens (about 5-7 minutes). Remove from heat and let cool.
- Roll Out Pastry: On a lightly floured surface, roll out the vegan puff pastry into a large rectangle. Cut it into squares (about 4×4 inches each).
- Fill Turnovers: Place a spoonful of the raspberry filling in the center of each square, leaving a border around the edges. Fold each square diagonally to form a triangle and press the edges to seal. Use a fork to crimp the edges for a decorative touch.
- Prep for Baking: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper. If desired, brush the tops of the turnovers with plant-based milk for a golden finish.
- Bake: Place the turnovers on the prepared baking sheet and bake for 15-20 minutes or until they are golden brown.
- Cool and Serve: Allow the turnovers to cool for a few minutes before dusting with powdered sugar if desired. Serve warm or at room temperature.
