Fluffy Vegan Blueberry Sweet Rolls With Fresh Berry Filling

I made this Vegan Blueberry Sweet Rolls for my family’s Sunday brunch last month. The blueberries stayed fresh in the filling, and my niece loved them.

With a fresh berry filling and a light, fluffy texture, these rolls are sure to impress. They can be served warm with a sprinkle of powdered sugar or a drizzle of icing for an extra touch of sweetness.

Ingredients

  • 3 cups all-purpose flour
  • 1/4 cup coconut sugar or brown sugar
  • 1 packet (2 1/4 teaspoons) instant yeast
  • 1/2 teaspoon salt
  • 1/2 cup almond milk (or any plant-based milk)
  • 1/4 cup coconut oil, melted
  • 1/4 cup maple syrup
  • 1 cup fresh blueberries
  • 1 teaspoon lemon juice
  • 1 teaspoon vanilla extract
  • Powdered sugar for dusting (optional)
  • Vegan icing for drizzling (optional)

Instructions

  1. Prepare the Dough: In a bowl, mix the flour, sugar, yeast, and salt. In a separate bowl, mix the almond milk, melted coconut oil, and maple syrup. Combine wet and dry ingredients to form a dough.
  2. Knead the Dough: Turn the dough onto a floured surface and knead for about 5 minutes until smooth. Place in a greased bowl, cover, and let rise in a warm area for about 1 hour.
  3. Make the Filling: In a bowl, gently toss fresh blueberries with lemon juice and set aside.
  4. Roll Out the Dough: Once the dough has risen, turn it onto a floured surface and roll it out into a rectangle about 1/4 inch thick.
  5. Add Filling: Spread the blueberries evenly over the dough, leaving a small border. Roll the dough tightly from one end to the other.
  6. Cut the Rolls: Slice the rolled dough into 12 equal pieces and place them in a greased baking dish.
  7. Second Rise: Cover the pan and let the rolls rise for an additional 30 minutes.
  8. Bake: Preheat the oven to 350°F (175°C). Bake the rolls for 20-25 minutes, or until golden brown.
  9. Cool and Serve: Allow the rolls to cool for a few minutes before dusting with powdered sugar or drizzling with vegan icing, if desired.
