This vegan blueberry tart is made with a flaky crust and a rich blueberry filling that is bursting with flavor. The preparation time is around 20 minutes, and the bake time is about 30 minutes, making it a quick and enjoyable dessert to whip up for your family or guests.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup coconut oil or vegan butter, melted
  • 1/4 cup powdered sugar
  • 1/4 teaspoon salt
  • 3-4 tablespoons cold water
  • 2 cups fresh or frozen blueberries
  • 1/4 cup maple syrup or agave nectar
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 1/2 teaspoon cinnamon optional

Instructions

  1. Make the Crust: In a mixing bowl, combine the flour, melted coconut oil, powdered sugar, and salt. Mix until crumbly, then add cold water, one tablespoon at a time, until the dough holds together.
  2. Form the Tart Shell: Press the dough into a tart pan evenly across the bottom and up the sides. Prick the bottom with a fork and chill in the fridge for 15 minutes.
  3. Prebake the Crust: Preheat your oven to 350°F (175°C). Bake the tart shell for about 15 minutes or until lightly golden. Remove from the oven and let cool slightly.
  4. Prepare the Filling: In a saucepan over medium heat, combine the blueberries, maple syrup, cornstarch, vanilla extract, lemon juice, and cinnamon. Stir gently and cook until the mixture begins to thicken and bubble, about 5-7 minutes.
  5. Assemble the Tart: Pour the blueberry filling into the cooled tart shell, spreading it evenly.
  6. Bake: Return the tart to the oven and bake for an additional 10-15 minutes until the filling is bubbly and the crust is golden.
