This vegan peach pie features juicy, ripe peaches mixed with a hint of cinnamon and sugar, all nestled in a homemade vegan crust. The pie takes about 1 hour and serves 8 people, making it a perfect addition to your summer gatherings.

Ingredients

  • 6 cups fresh peaches, peeled and sliced
  • 3/4 cup granulated sugar, adjust to taste
  • 1/4 cup cornstarch
  • 1 teaspoon ground cinnamon
  • 1 tablespoon lemon juice
  • 1 tablespoon vegan butter, melted
  • 1 pre-made vegan pie crust
  • 1 tablespoon non-dairy milk for brushing
  • 1 tablespoon extra sugar for topping

Instructions

  1. Prepare the Filling: In a large bowl, combine sliced peaches, sugar, cornstarch, cinnamon, and lemon juice. Toss to coat the peaches evenly and let the mixture sit for about 15 minutes to allow the juices to develop.
  2. Preheat Oven: Preheat your oven to 425°F (220°C).
