Cozy Vegan Maple Pecan Cookies With Rich Fall Flavor

These cookies have a soft and chewy texture, with a nutty flavor from pecans and a subtle sweetness from maple syrup. The recipe takes about 30 minutes from start to finish and yields approximately 12 cookies.

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup rolled oats
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup maple syrup
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1/2 cup pecans, chopped
  • 1/4 teaspoon cinnamon optional

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mix Dry Ingredients: In a bowl, combine the flour, rolled oats, baking soda, salt, and cinnamon (if using). Stir until well combined.
