Easy Vegan Roasted Garlic Tomato Pasta
This pasta features al dente spaghetti tossed in a sauce made from roasted garlic, fresh tomatoes, and basil. The recipe takes about 30 minutes from start to finish and serves 4 people.
Ingredients
- 12 ounces spaghetti or pasta of choice
- 1 head of garlic
- 4 cups cherry tomatoes, halved
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1/4 cup fresh basil, chopped
- Red pepper flakes (optional, for heat)
Instructions
- Roast the Garlic: Preheat the oven to 400°F (200°C). Slice the top off the head of garlic, drizzle with olive oil, wrap in foil, and roast for 30-35 minutes until soft.
- Cook the Pasta: While the garlic is roasting, cook the spaghetti according to package instructions. Drain and set aside, reserving 1/2 cup of pasta water.
- Prepare the Sauce: In a large skillet, heat olive oil over medium heat. Add the halved cherry tomatoes and cook until they start to soften, about 5-7 minutes.
- Add Roasted Garlic: Squeeze the roasted garlic cloves out of their skins into the skillet with the tomatoes. Mash them slightly with a fork and mix well.
- Combine: Add the cooked pasta to the skillet, tossing to combine. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.
- Season and Serve: Stir in chopped basil, and season with salt, pepper, and red pepper flakes if using. Serve hot.
