Ingredients

  • 12 ounces spaghetti or pasta of choice
  • 1 head of garlic
  • 4 cups cherry tomatoes, halved
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1/4 cup fresh basil, chopped
  • Red pepper flakes (optional, for heat)

Instructions

  1. Roast the Garlic: Preheat the oven to 400°F (200°C). Slice the top off the head of garlic, drizzle with olive oil, wrap in foil, and roast for 30-35 minutes until soft.
  2. Cook the Pasta: While the garlic is roasting, cook the spaghetti according to package instructions. Drain and set aside, reserving 1/2 cup of pasta water.
