These soft vegan chocolate caramels are made with coconut milk, brown sugar, and dairy-free chocolate, delivering an irresistible flavor and texture. The recipe takes about 30 minutes to prepare and results in a batch of 24 caramels.
Ingredients
- 1 cup full-fat coconut milk
- 1 cup brown sugar
- 1/4 cup maple syrup
- 1/4 cup coconut oil
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1 cup dairy-free dark chocolate chips
- Chopped nuts or sea salt for topping (optional)
Instructions
- Prepare the Pan: Line an 8-inch square baking pan with parchment paper, leaving some overhang for easy removal later.
- Combine Ingredients: In a medium saucepan over medium heat, combine the coconut milk, brown sugar, maple syrup, coconut oil, vanilla extract, and salt. Stir frequently until the sugar is dissolved and the mixture starts to boil.
- Cook the Caramel: Reduce the heat slightly and continue to cook while stirring frequently for about 10-15 minutes, or until it thickens and reaches a caramel consistency. It should reach about 240°F (soft-ball stage) on a candy thermometer.
- Set the Caramels: Quickly pour the caramel mixture into the prepared pan and spread it evenly. Let it cool at room temperature for about 30 minutes, then refrigerate until fully set (about 1-2 hours).
- Coat with Chocolate: Once set, remove the caramel from the pan using the parchment overhang. Cut into squares. Melt the dairy-free dark chocolate in a microwave or a double boiler, then dip each caramel square into the chocolate, letting the excess drip off.
- Finish and Serve: Place the chocolate-coated caramels on a baking sheet lined with parchment paper. If desired, sprinkle with chopped nuts or sea salt before the chocolate sets. Allow the chocolate to harden at room temperature or place them in the fridge to speed up the process.
