Delicious Vegan Mince Pies with Fruity Filling

These delectable vegan mince pies feature a rich fruit filling made from raisins, sultanas, and spices encased in a homemade pastry. The recipe takes about 1 hour to prepare and bake, yielding around 12 pies perfect for sharing.
Ingredients
- 2 cups all-purpose flour
- 1/2 cup coconut oil or vegan butter, chilled
- 1/2 cup powdered sugar
- 1/4 teaspoon salt
- 4-5 tablespoons cold water
- 1 cup mixed dried fruits (raisins, sultanas, currants)
- 1/2 cup apples, diced
- 1/4 cup orange juice
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon allspice
- Zest of 1 orange
- 1 tablespoon chopped nuts (optional)
- Plant-based milk for brushing
Instructions
- Make the Pastry: In a bowl, combine flour, powdered sugar, and salt. Cut in coconut oil or vegan butter until the mixture resembles breadcrumbs. Add cold water gradually until the dough comes together. Wrap in plastic and chill for 30 minutes.
- Prepare the Filling: Mix dried fruits, diced apples, orange juice, spices, and zest in a saucepan. Simmer for 5-7 minutes until the mixture thickens slightly. Allow it to cool.
- Roll Out the Pastry: Preheat the oven to 350°F (175°C). Roll out the chilled pastry on a floured surface to about 1/8-inch thick. Cut out circles for the bases and smaller circles for the tops.
- Assemble the Pies: Place the larger pastry circles into a greased muffin tin. Fill each with the fruity mixture. Cover with the smaller pastry circles and seal the edges.
- Bake: Brush the tops with plant-based milk for a golden finish. Bake for 20-25 minutes until golden brown.
- Cool and Serve: Allow the pies to cool in the tin for a few minutes before transferring to a wire rack. Serve warm or at room temperature, dusted with powdered sugar.
