Buttery Vegan Bakewell Tart With Almond and Raspberry Layers

I baked this Vegan Bakewell Tart for my niece’s birthday party last weekend. The almond and raspberry layered buttery, and my aunt loved it.

This Vegan Bakewell Tart consists of a crisp tart base, a generous layer of raspberry jam, and a light almond sponge that rises beautifully in the oven. It serves 8 and takes about 1 hour to prepare and bake.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup almond flour
  • 1/2 cup vegan butter, softened
  • 1/2 cup powdered sugar
  • 1 tablespoon ground flaxseed mixed with 2.5 tablespoons water (flax egg)
  • 1 teaspoon almond extract
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup raspberry jam
  • Sliced almonds for topping (optional)
  • Powdered sugar for dusting (optional)

Instructions

  1. Prepare the Tart Base: Preheat your oven to 350°F (175°C). In a mixing bowl, combine all-purpose flour, almond flour, powdered sugar, and salt. Add the softened vegan butter and mix until crumbly. Press the mixture into a tart pan to form an even layer. Prick with a fork and bake for 12-15 minutes until lightly golden.
  2. Make the Almond Sponge: In a separate bowl, whisk together the flax egg, almond extract, vanilla extract, baking powder, and remaining almond flour. Mix until smooth. Pour the batter over the baked tart base, spreading evenly.
  3. Add the Jam Layer: Spoon the raspberry jam over the almond sponge layer, spreading it gently to cover.
  4. Bake: Return the tart to the oven and bake for an additional 25-30 minutes, or until the sponge is set and lightly golden on top.
  5. Cool and Serve: Allow the tart to cool completely in the pan before removing it. Dust with powdered sugar and top with sliced almonds if desired. Slice and enjoy your delicious vegan dessert!
