I made this Vegan Berry Soufflé for my mom’s birthday last month. The berries stayed fresh in the fluffy top, and my niece liked it.
Light and Airy Vegan Berry Soufflé

This stunning souflé features a combination of fresh berries blended with aquafaba, creating a perfect balance of sweetness and tartness. It takes about 30 minutes to prepare and serves 4 people.
Ingredients
- 1 cup mixed fresh berries (strawberries, blueberries, raspberries)
- 1/4 cup sugar or sweetener of choice
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon lemon juice
- 1/2 cup aquafaba (chickpea brine)
- 1/2 teaspoon cream of tartar
- Pinch of salt
- Fresh berries for garnish
- Mint leaves for garnish (optional)
Instructions
- Prep the Ingredients: Preheat your oven to 375°F (190°C) and grease ramekins with a bit of oil or cooking spray.
- Make Berry Mixture: In a blender, combine the mixed berries, sugar, vanilla extract, and lemon juice. Blend until smooth and set aside.
- Whip Aquafaba: In a large mixing bowl, add aquafaba and cream of tartar. Using an electric mixer, whip the aquafaba until it forms stiff peaks.
- Fold Mixtures Together: Gently fold the berry mixture into the whipped aquafaba, being careful not to deflate it.
- Transfer to Ramekins: Spoon the mixture into the prepared ramekins, filling them to the top. Smooth the surface with a spatula.
- Bake: Place the ramekins on a baking sheet and bake for 15-20 minutes, until the soufflés are puffed and slightly golden on top.
- Serve Immediately: Remove from the oven, serve hot, and garnish with fresh berries and mint leaves if desired.
