Creamy Vegan Flan With a Rich Caramel Topping

I made this Vegan Flan for my dad’s holiday dinner last month. The caramel stayed rich on top, and my grandma loved it.

This vegan flan features a creamy base made from coconut milk set with agar-agar, giving it a silky consistency. The caramel topping is made with sugar and water, which creates a beautiful finish. This dessert takes about 1 hour to prepare and chill, and serves 6 people.

Ingredients

  • 1 cup coconut milk
  • 1 cup almond milk (or any non-dairy milk)
  • 1/2 cup sugar
  • 1/4 cup cornstarch
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 2 tablespoons agar-agar powder
  • 1 cup sugar (for caramel)
  • 1/4 cup water (for caramel)

Instructions

  1. Prepare the Caramel: In a saucepan, combine 1 cup of sugar and 1/4 cup of water. Cook over medium heat until the sugar dissolves and turns a golden brown. Quickly pour the caramel into a flan mold or individual ramekins and tilt to coat the bottoms evenly.
  2. Mix the Flan Ingredients: In a medium saucepan, combine coconut milk, almond milk, sugar, cornstarch, vanilla extract, and salt. Whisk until smooth and combine.
  3. Add Agar-Agar: Sprinkle the agar-agar powder over the mixture and stir well. Heat the saucepan over medium heat, stirring constantly until it thickens and just starts to boil, about 5-7 minutes.
  4. Pour into Molds: Remove from heat and carefully pour the flan mixture over the prepared caramel in the molds or ramekins.
  5. Chill: Allow the flan to cool at room temperature, then cover and refrigerate for at least 2-3 hours or until set.
  6. Serve: To unmold, run a sharp knife along the edges of the flan, place a plate on top, and flip over to release. Drizzle any remaining caramel over the flan before serving.
