Jammy Vegan Blackberry Bars With a Buttery Crumble Topping

I baked this Vegan Blackberry Bars for my sister’s summer party last weekend. The blackberries stayed jammy under the topping, and my dad liked them.

Easy Vegan Blackberry Bars Recipe

Jammy vegan blackberry crumble bars on a wooden table, topped with powdered sugar and fresh blackberries.

These crumble bars are packed with sweet, tangy blackberries, creating a luscious filling that’s complemented by a buttery oat topping. Preparing the bars takes about 45 minutes, and they can be cut into squares to serve as a delicious snack or dessert.

Ingredients

  • 2 cups fresh blackberries (or frozen, thawed)
  • 1/4 cup maple syrup (adjust based on sweetness preference)
  • 1 tablespoon cornstarch or arrowroot powder
  • 1 teaspoon vanilla extract
  • 1 1/2 cups oats (rolled or quick)
  • 1 cup all-purpose flour (or a gluten-free blend)
  • 1/2 cup coconut oil or vegan butter, melted
  • 1/2 cup brown sugar or coconut sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • Optional: powdered sugar for dusting

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C) and grease an 8-inch square baking pan or line it with parchment paper.
  2. Prepare the Blackberry Filling: In a medium saucepan over medium heat, combine the blackberries, maple syrup, cornstarch, and vanilla extract. Cook for about 5-7 minutes, stirring gently until the mixture thickens slightly. Remove from heat and set aside.
  3. Make the Crumble Topping: In a large bowl, mix together the oats, flour, melted coconut oil, brown sugar, baking powder, and salt until crumbly.
  4. Assemble the Bars: Press about 2/3 of the crumble mixture into the bottom of the prepared pan to create the base. Spread the blackberry filling evenly over the base, then sprinkle the remaining crumble topping on top.
  5. Bake: Bake in the preheated oven for 25-30 minutes or until the topping is golden brown. Allow bars to cool in the pan for at least 10 minutes before slicing.
  6. Serve: Once cooled, cut into squares and dust with powdered sugar if desired. Enjoy as a delicious vegan dessert!
