Easy and Delicious Vegan Vanilla Granola

Ingredients
- 3 cups rolled oats
- 1 cup mixed nuts (e.g., almonds, walnuts, pecans), chopped
- 1/2 cup pumpkin seeds or sunflower seeds
- 1/4 cup maple syrup
- 1/4 cup coconut oil, melted
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/2 cup dried fruit (e.g., raisins, cranberries) optional
Instructions
- Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Mix the Ingredients: In a large bowl, combine rolled oats, chopped nuts, seeds, salt, and cinnamon. In a separate bowl, whisk together maple syrup, melted coconut oil, and vanilla extract until well combined.
