These toasted almond snacks are coated in a crunchy sugar shell with a hint of cinnamon, making them irresistible. The preparation time is short, and they make a fantastic snack or addition to desserts, serving approximately 4 people.
Ingredients
- 2 cups raw almonds
- 1 cup sugar
- 1/2 cup water
- 1 tablespoon ground cinnamon
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- Prepare the Almonds: Preheat the oven to 350°F (175°C) and spread the almonds out on a baking sheet. Toast them in the oven for 10-12 minutes, stirring occasionally until golden brown.
- Make the Sugar Coating: In a saucepan, combine sugar, water, cinnamon, vanilla extract, and salt. Heat over medium heat, stirring until the sugar dissolves.
- Coat the Almonds: Add the toasted almonds to the saucepan and stir to coat them in the sugar mixture. Cook for an additional 2-3 minutes until the liquid thickens slightly.
- Cool and Dry: Line a baking sheet with parchment paper. Spread the coated almonds in a single layer and let them cool completely, allowing the sugar shell to harden.
- Serve: Enjoy the crunchy vegan cinnamon almonds as a snack or use them to enhance other vegan desserts.
