These vegan frozen lemon bars feature a smooth and tangy lemon filling atop a buttery graham cracker crust. They are frozen to create a perfectly chilled dessert, ideal for sharing during summertime gatherings or as a fun treat anytime.
Ingredients
- 1 ½ cups graham cracker crumbs
- ½ cup coconut oil melted
- ¼ cup maple syrup
- 1 ½ cups coconut cream refrigerated
- ½ cup fresh lemon juice
- Zest of 2 lemons
- ¾ cup powdered sugar
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- Prepare the Crust: In a mixing bowl, combine graham cracker crumbs, melted coconut oil, and maple syrup. Press the mixture evenly into the bottom of an 8×8-inch baking dish.
- Make the Filling: In a blender or food processor, combine coconut cream, fresh lemon juice, lemon zest, powdered sugar, vanilla extract, and salt. Blend until smooth and creamy.

- Freeze: Cover the dish with plastic wrap and place it in the freezer for at least 4 hours, or until firm.
